Salt Fish and Potatoes,
with Drawn butter

Fish Preparation:
Add about 2 lbs of deboned salt cod into a large cooking pot filled 1/4 up with water, Add potatoes and a small onion. Boil salt fish, onions and potatoes in same pot until potatoes are soft.

Drawn Butter
1/4 cup butter
2 1/2 tbsp flour
2 small onions chopped
1 1/2 cup hot water
salt and pepper

Melt butter in a saucepan, add onions and cook for a few minutes over low heat. Then add flour and blend thoroughly. Add hot water and cook until thickened; stir constantly. add salt and pepper to desired taste.

Pour drawn butter over potato mixture and serve. Serves 4.
